Eighteen years as head chef
at Chūgoku Hanten.
Chef Baika Fukunaga served as head chef at the venerable Chūgoku Hanten for some eighteen years. In 2007 he opened Birinka Hanten in Azabudai, a restaurant known as a haunt of notable figures from many circles.
In that kitchen, the chef has long made his own XO sauce — until now given quietly, only as a gift to a few guests.
In time, more and more of them asked us to sell it: "I want this," "I want more." In answer to those voices, we are offering it as a product for the very first time.
Furuika in Azabu-Jūban is the restaurant of the chef's brother; the signature black-vinegar sweet-and-sour pork is said to be their creation.
